Ingredients and Substitutes
Raw shrimp, peeled and deveined (1lb medium) – You can use large shrimp or replace them with salmon or white fish chunks.
Head of broccoli, cut into florets (1 large) – Swap with asparagus, green beans, zucchini, mushrooms, or cherry tomatoes (or a combination of several).
Garlic, minced (2 cloves) – Replace with garlic flakes or powder if you don’t have fresh garlic.
Lemon, juiced (1/2)
Butter (2 tbsp) – Try using ghee since it has a cheesier flavor and creamier texture.
Chicken broth, divided (2 tbsp) – You can also use veggie broth or white wine vinegar.
Fresh parsley, chopped
Seasoning
Italian seasoning (1 tsp)
Onion powder (1 tsp) – You can also use onion flakes or crispy onions.
Smoked paprika (1/2 tsp) – If you don’t have smoked paprika, you can use cayenne pepper or chipotle powder.
Salt and black pepper, to taste

How to Make Baked Shrimp and Broccoli Foil Packs
Step 1. Preheat your oven to 425°F and grab a baking sheet. Cut aluminum foil into two squares of 14×14 and lay them down on top of the baking sheet.
Grab a small bowl and add all the seasoning ingredients.
Step 2. Give the spice blend a good mix to combine all the ingredients.

Step 3. Combine the spice blend with the shrimp. Make sure you toss it around to coat all the shrimp.
Step 4. Divide the shrimp into the two aluminum squares. Add the broccoli to the side and add 1 tbsp of butter to each square and 1 tbsp of broth.
Add the garlic on top of the shrimp.

Step 5. Wrap the packet and make sure they are not too tight. They need to have some breathing room. Place them in the oven and cook for 15 minutes or until the shrimp has cooked through.
Step 6. Once it’s done, remove from the oven and unwrap the foil packets. Garnish with fresh parsley and lemon wedges before serving.

- Add More Veggies: You can add other veggies like bell peppers, sweet potatoes (thinly sliced), or Brussels sprouts.
- Boost The Heat: If you like spicy food, add more pepper flakes or jalapeño slices. You can also make a mayo sriracha to sprinkle on top once it’s done.
- Up the Protein: If you want more protein you can add some cooked grains like quinoa to the packets after they are done cooking or some chickpeas.

My Tips & Tricks
- Don’t Overcook: Shrimp cooks quickly, so make sure you don’t leave it in the oven for too long to avoid rubbery shrimp.
- Avoid Overcrowding: If the foil packets are too full, the shrimp and broccoli may steam instead of roasting properly.
- Add Some Cheese: Consider sprinkling some parmesan or feta after cooking to add a creamy, salty twist.
My Storage Tips
Transfer any leftovers to an airtight container and place them in the fridge for up to 2-3 days.
While you could place it in the freezer, the broccoli may lose its texture. So, if you want to freeze it, consider freezing the shrimp with the coating.
You can keep the shrimp in the freezer for up to 2 months.

Ingredients
- 1 lb medium raw shrimp peeled and deveined
- 1 large head of broccoli cut into florets
- 2 garlic cloves minced
- 1/2 lemon juiced
- 2 tbsp butter
- 2 tbsp chicken broth divided
- Fresh parsley chopped
Seasoning
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Preheat the oven to 425F. Prepare a baking sheet.
- Cut aluminium foil into two square 14’’x14’’ sheets. Lay them down.
- In a small bowl, combine all the seasoning ingredients.
- Then, cover the shrimp with the spice mix. Place the shrimp in the middle of the aluminium sheets, dividing evenly.
- Place broccoli florets on one side of the shrimp, add garlic over the shrimp and broccoli, and squeeze over the lemon juice.
- Cover each stack with 1 tbsp of butter and 1 tbsp of chicken broth on each.
- Wrap the packets and make sure you don’t wrap them too tightly.
- Transfer onto the baking sheet and bake in the oven for 15 minutes until the shrimp has cooked through.
- Unwrap the foil packets and garnish with fresh parsley before serving.
