Chicken
- 1 red bell pepper diced
- ½ large yellow onion diced
- 2 garlic cloves minced
- 1.5 lb chicken breasts skinless and boneless
Sauce
- 1/2 cup peanut butter
- 1/2 cup chicken broth
- 1/4 cup soy sauce or coconut aminos
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tsp chili pepper paste
- ½ lime juiced
- A bunch cilantro chopped
Add bell pepper, onion, and garlic to the bottom of the crockpot. Place chicken on top.
In a bowl, whisk together peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili paste.
Pour the sauce over the chicken.
Cover and cook on HIGH for 2–3 hours or LOW for 4–5 hours.
Stir in lime juice and cilantro.
Serve warm with rice.
