Crockpot Greek Chicken

- 1 tbsp olive oil
- 2 lbs chicken breasts boneless and skinless
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 12 oz jar roasted red peppers drained and chopped
- 1 cup kalamata olives drained
- 1 medium red onion cut into chunks
- 3 tbsp red wine vinegar
- 4 garlic cloves minced
- 1 tsp honey
- 1 tsp dried oregano
- 1 tsp dried thyme
For Serving
- 1/2 cup feta cheese crumbled
- fresh parsley chopped
Heat olive oil in a skillet over medium-high heat.
Season chicken with salt and pepper. Sear for 1-2 minutes per side until lightly browned. Transfer to crockpot.
Add roasted red peppers, olives, and onion around the chicken.
In a bowl, mix vinegar, garlic, honey, oregano, and thyme.
Pour mixture over chicken and vegetables.
Cover and cook on HIGH for 1.5-2 hours or LOW for 3-4 hours, until chicken is fully cooked.
Top with feta and fresh parsley. Serve.
